Day 168 Stop and Look 365

This is chicory. You can find it on the side of the road and fields. You have to dig it up, clean it, and roast the roots. Then you grind up the roots to make coffee. Or add them to your favorite coffee beans. I have learned about this process through my foraging adventures. I am excited to know I will be able to make a cup of Louisiana coffee from something I once viewed as a weed. I guess the old adage is true: “Never judge something by its appearance.” All I need now is my favorite mug.
